Pasta al vino

Pasta and wine – the quintessential of Italian lifestyle when it comes to food. In this easy, but delicious (I promise!) recipe, wine is not poured into a fancy glass. Instead, it’s used as main ingredient to flavour pasta. You can pair your dish with a nice bottle of wine, just remember to save a glass for cooking. This recipe embodies the Italian way of eating: simple ingredients, cooked with care, creating memorable flavours.

Essential Ingredients for 1

½ small red onion

1 small glass of red wine

Water

1-2 tablespoons of olive oil

1 stock cube

Salt

70 gr pasta (preferably penne or other short pasta)

Parmesan cheese to taste

Black pepper

Step 1

Dice or thinly slice the onion. Sauté it in a pan with the oil until lightly browned.

Step 2

Add the pasta. Stir for 30-60 seconds, then pour in the wine. Stir for other 60-90 seconds, then begin adding the broth (previously prepared with water and the stock cube), one small ladle at a time, as the pasta absorbs the liquid.

Note: The pasta should be cooked and ready to eat without needing to be strained.

Step 3

Cook the pasta to your preferred texture, ideally al dente, leaving some of the dense wine sauce created during the cooking process.

Step 4

Serve on a plate and sprinkle with Parmesan cheese. Add salt and black pepper, if you fancy. I’ve never tried it myself, but I think a little parsley on top would also make a lovely finishing touch.
